It was my first attempt of baking. After weeks of completing the ingredients (yes, i usually don't have that much of a time, so it took me such a long time to buy the ingredients until they are complete. I've searched loads of carrot cake recipes and selected the easiest of them all. So here it is:
Ingredients:
2 cups of flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp vanilla extract
1 tsp cinnamon powder
2 cups sugar
4 eggs
3 cups grated carrots (or 8 medium sized carrots)
1 cup vegetable oil (i'm using canola oil)
1 tsp nutmeg powder (optional)
1 cup walnuts, chopped (optional)
pre-heat oven to 350 degrees F (170 degrees C). In a large bowl, mix flour, sugar, baking soda, baking powder, salt, cinnamon powder, nutmeg powder. Don't forget to sift the flour. In a smaller bowl, beat eggs, vanilla extract, and vegetable oil. Mix wet ingredients and dry ingredients altogether. You can add chopped walnuts or chopped pecans if you want, it's only optional. Pour the cake batter into the pan that has been greased with butter (and has been sprinkled with flour). Bake the cake for 30 to 40 minutes or until a toothpick inserted in center comes out clean. Let the cake cool for a few minutes and when it's completely cooled, spread the cheese cream frosting.
cheese cream frosting
1/2 cup butter
1 pack of yummy cream cheese (it's a local brand)
1 cup of confectioners sugar
carrots will moisten the cake. cinnamon powder and vanilla extract will make your cake smells delicious. actually i don't really like to put lots of eggs in the cake, so usually i'm only using 3 eggs or 3 whole eggs and 1 egg yolks to soften the cake. oh well, it's a trial and error anyways, so i guess i'm still searching for the perfect methods and recipes that suit me :)
here it is, my very first carrot cake with cheese cream frosting. i used too much baking soda (accidentally), so it tasted a bit bitter but still yum.
