eggless fluffy pancake.




Phewww.. all those child and baby sitting things made me forget to post anything. So here i am now in front of my laptop, both kids are asleep, and i just want to update whatever i've made.

So, eggless pancake. Seems so impossible but when i made this, i woke up in the morning and thought about pancakes but when i opened my fridge, there were no eggs left. Googled this and that, and here's what i found here.



Ingredients:

  • 1 cup all-purpose flour
  • 1 teaspoon sugar
  • 2 teaspoon baking powder
  • 1 cup whole milk
  • 1tbsp vegetable oil
  • 1 tsp vanilla extract
  • 2 tbsp butter
Directions:
  1. Combine dry ingredients and mix slightly
  2. Add milk, oil, water, and vanilla. Whisk together until combined. Do not over mix.
  3. Heat a large skillet over medium-high heat until hot. When pan is heating, add butter until melted and a paddle of pancake batter.
  4. Cook until bubbles form on the surface.
  5. Carefully flip pancakes with turner or a spatula and cook until golden brown.
  6. Serve them while still warm.


You can add anything for the topping. Here i used creamy peanut butter, sliced bananas, and a drizzle of caramel syrup. Perfect morning for me, it was!
